Greetings,
My regular meat cutter is going out of business, so when my son tagged out on opening day we took it to another butcher shop. 
I was stunned when the call came in to pick it up at a cost of $135.00  :yike:
That makes it worth cutter ourselves.  I'm used to paying around $65 to $75 for a blacktail, which makes it worth while to drop it off.

What's the going rate in your area?

$.89 per pound. They hang it weigh it and cut it up. You can just give them quarters or debone if your worried about weight.

They also charge $1 per day to hang it per hook if they have space. (deer take 2 hooks, elk normally 4-5) I hung my elk for 10 days then picked it up for $40. This is what I normally do because a buddy has a processing facility and commercial vacuum packer.

My hunting partner pays someone to butcher. They do a good job but jacked up their prices this year, more than $100 per deer/lope   :(

I've never paid $1 to a butcher--always done it at home.

40 bucks for vacuum bags and used 3 rolls. Plus 2 days to cut, electricity, vacuum sealer, grinder, slicer...cost for equipment was around 500 but now I can do the processing exactly the way I want it. Best investment last year :tup:

I need a walk-in cooler,  hard to get excited about hunting early September when I don't have a place to hang/cool out the meat.

I talked to a butcher down this way and he gets .70 cents a pound hanging weight.

$0.89/lb (hanging weight) cut, wrapped and frozen when I pick it up.

I usually pay around $100 but that's because I get jerky or sausage made too. I have cut and wrapped my own before but sometimes the $ is worth it to save time and get some specialty cuts.

My butcher charged me $200.00.  He made me 30# of summer sausage, a few packages of burger, back strap was made into steaks, and he packaged up the tender loins.
He charged $5.00 /lb for sausage that's $150.00. He did supply 15# of pork for the sausage.
So I guess the processing was $50.00.
The sausage is great.

Been a few years $125 cut an wrap "vac sealed". Sausage, pepperoni and other things were extra.

ya a walk in cooler would be nice, but years ago lived/hunted in South Carolina, early season temps in the 90's... would take the deer home skin it, fill the bath tub with cold water, add a pound of salt and soak the carcass overnight then butcher, cut, and wrap it the next morning... the salt water leaches most of the blood out and gets rid of any "gamey" taste... meat was great without hanging...
